Do Google, WhatsApp and Instagram work?
Yes. Hong Kong is not behind the mainland China firewall, so Google, WhatsApp, Instagram and all your usual apps work normally, without a VPN.

Install at home, the plan starts in Hong Kong
You can install the eSIM before your trip. The plan only starts once the eSIM connects to a network in Hong Kong. After landing, switch mobile data to the eSIM and turn on data roaming.
